Baked Plantain Chips

INGREDIENTS
- 2 plantains, peeled and sliced very thin
- 2 Tbs olive oil
- Kosher salt to taste
DIRECTIONS
- Preheat the oven to 375 degrees F.
- In a large bowl, toss the plantain slices with the oil to coat evenly.
- Line a baking sheet with parchment paper. Spread the plantain chips over it in a single layer, then sprinkle them with salt.
- Bake for 10 minutes.
- With a spatula or tongs, flip the chips over and sprinkle the other side of them with more salt if desired.
- Bake for an additional 5 to 10 minutes, until browned on the edges. When done, turn off the oven and open the oven just slightly so the chips cool gradually. This will help them become even more crispy!
NOTES
- To peel a plantain easily, cut off the ends first, then slice the peel lengthwise to remove.
