Oyster Pie

INGREDIENTS
- ½ cup butter, room temperature
- 1 ½ cups lightly crushed Saltine crackers (about 1 sleeve or 40 crackers)
- 2 cups shucked oysters (16 oz canned, liquor reserved)
- ¾ cup whole milk
- Salt and pepper to taste
DIRECTIONS
- Preheat the oven to 350 degrees F and butter an 8″x8″ baking dish.
- Put 1/3 of the crushed Saltines at the bottom of the dish, then top with half of the oysters. Add salt and pepper to taste. Repeat with another 1/3 of Saltines, the other half of the oysters, and then top with the last 1/3 of Saltines.
- Drizzle the milk over the casserole, then cube the butter and spread the pieces over top.
- Bake for 20 to 30 minutes, until the crackers on top are browned and the casserole is bubbly.
- Serve hot!
