Shoofly Pie

INGREDIENTS
- 1 9-inch pie crust, unbaked (click here for a good recipe)
- 1 ½ cups flour
- ⅔ cup dark brown sugar
- 1 tsp cinnamon
- ¼ tsp salt
- ¼ tsp nutmeg
- 6 Tbs cold butter, cut into pieces
- ½ tsp baking soda
- ¾ cup boiling water
- ¾ cup molasses
- 1 large egg yolk
DIRECTIONS
- Preheat the oven to 425 degrees F.
- In a medium bowl, whisk together the flour, brown sugar, cinnamon, salt, and nutmeg.
- Cut in the butter until the mixture is crumbly, then set aside.
- In a separate bowl, mix the hot water and baking soda until the baking soda is completely dissolved.
- Add the molasses and whisk until combined, then add in the egg yolk.
- Pour half of the molasses mixture into the pie crust, then sprinkle with half of the crumb mixture. Add the second half of the molasses mixture, then top with the remaining crumb mixture. It will be liquidy!
- Bake for 15 minutes at 425 degrees F, then reduce the heat to 350 degrees F and bake for an additional 20 to 25 minutes, until the filling is set and golden brown.
- Cool the pie on a wire rack and serve at room temperature with whipped cream.
