Stuffed Pork Chops

INGREDIENTS
- 4 bone-in pork loin chops (at least 1” thick and 8 oz)
- 1 Tbs canola oil
- 1 Tbs finely chopped onion
- 1 Tbs milk
- 1 Tbs minced parsley
- ¼ tsp sage
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup chopped, peeled apple
- 1 cup whole kernel corn
- 1 cup dry bread crumbs
- ⅓ cup honey
- 3 Tbs Dijon mustard
- ¼ tsp rosemary
DIRECTIONS
- Preheat oven to 350 degrees F. and grease a 9×13 baking dish.
- Slice each pork chop horizontally almost to the bone to create a pocket in the middle.
- In a large skillet, heat oil over medium heat. Brown the chops, then remove from heat to cool slightly while preparing the stuffing.
- In a large bowl, combine the onion, milk, parsley, sage, salt, and pepper. Add the apple, corn, and bread crumbs, tossing to combine.
- Spoon the filling into the pork chops and place in the baking dish.
- In a small bowl, combine the honey, mustard, and rosemary. Pour half over the pork chops and reserve the rest.
- Bake, uncovered, for 30 minutes. Brush the remaining sauce over the pork chops, then continue to bake until a thermometer reads 165 degrees F., about 20-30 minutes longer.
- Serve immediately with mashed potatoes!
