Bison Burgers

INGREDIENTS
- 2 lbs ground bison
- 2 tsp Dijon mustard
- 1 tsp onion powder
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
- 6 brioche hamburger buns
- 6 slices swiss cheese
- 6 slices tomatoes
- 6 slices onion
- Additional toppings to taste: berry BBQ sauce, ketchup, mayo, mustard, dill pickles
DIRECTIONS
- In a large bowl, gently mix the meat, mustard, and spices until combined. Be careful not to overwork the meat!
- Divide the meat into six even-sized patties, ⅓ lb each and slightly larger than your burger buns.
- On a grill over high heat (or in a greased skillet over medium-high heat), cook the patties until medium-rare, about 2-3 minutes per side. The internal temperature should be 140-145 degrees F.
- Top with cheese and cover for the last minute of grilling to melt.
- Serve on hamburger buns with tomatoes, onion, and additional toppings to taste!
