Grilled Salmon

INGREDIENTS
- 4 salmon filets (6-8 oz, skin on)
- 2 Tbs olive oil
- 2 tsp kosher salt
- 2 tsp ground black pepper
- Lemon wedges for garnish
DIRECTIONS
- Preheat a greased pan grill or cast-iron pan over medium-high heat.
- Coat the salmon filets with olive oil, then season with salt and pepper.
- Set the filets in the pan skin-side down and let them cook, untouched, for 4-6 minutes, until the flesh becomes more opaque and firm to the touch.
- Flip the filets for 2-4 minutes longer, until cooked through.
- Serve with lemon wedges!
