Rocky Road Ice Cream

INGREDIENTS

  • 2 cups heavy whipping cream
  • 1 (14-oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • ½ cup cocoa powder
  • 1 cup mini marshmallows
  • ½ cup sliced almonds
  • ½ cup semisweet chocolate chips
  • ⅛ tsp kosher salt

DIRECTIONS

  • In a small bowl, whisk together the sweetened condensed milk, vanilla extract, and almond extract. 
  • In a large mixing bowl, use electric beaters to whip the heavy cream on high speed until fluffy and thickened, about 5 minutes. 
  • Fold in the sweetened condensed milk until fully incorporated.
  • Add the cocoa powder and use a hand whisk to gently mix it in.
  • Reserve a little of the marshmallows, almonds, and chocolate chips, but stir in the rest.
  • Pour the mixture into a 9×5 loaf pan and sprinkle over the reserved toppings. 
  • Cover and freeze for at least 6 hours.
