Baked Chimichangas

INGREDIENTS
- 6 flour tortillas
- 1 ½ cups cooked, shredded chicken
- 1 can refried beans
- 1 cup shredded cheddar or Mexican cheese
- ½ cup salsa
- 2 green onions, diced
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp oregano
- 2 Tbsp butter, melted
- Extra cheese, green onion, sour cream, and salsa for serving
DIRECTIONS
- Preheat oven to 400 degrees F.
- In a large bowl, mix together the shredded chicken, refried beans, cheese, salsa, green onions, and spices.
- Spoon about ½ cup of the mixture in the middle of each tortilla, then roll them up like burritos.
- Place seam-side down on a baking sheet and brush with the melted butter.
- Bake until golden and crispy, about 25 minutes.
- Top with extra cheese, green onion, sour cream, and salsa if desired!
