Baked Chimichangas

INGREDIENTS

  • 6 flour tortillas
  • 1 ½ cups cooked, shredded chicken
  • 1 can refried beans
  • 1 cup shredded cheddar or Mexican cheese
  • ½ cup salsa
  • 2 green onions, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp oregano
  • 2 Tbsp butter, melted
  • Extra cheese, green onion, sour cream, and salsa for serving

DIRECTIONS

  • Preheat oven to 400 degrees F.
  • In a large bowl, mix together the shredded chicken, refried beans, cheese, salsa, green onions, and spices.
  • Spoon about ½ cup of the mixture in the middle of each tortilla, then roll them up like burritos.
  • Place seam-side down on a baking sheet and brush with the melted butter. 
  • Bake until golden and crispy, about 25 minutes.
  • Top with extra cheese, green onion, sour cream, and salsa if desired!
