Mom’s Lemon Bars

INGREDIENTS
- ½ cup butter, softened
- ¼ cup powdered sugar + more for dusting
- 1 cup flour + 2 Tbsp (divided)
- 2 eggs
- 1 cup sugar
- 2 Tbsp lemon juice
- Zest from ½ lemon
DIRECTIONS
- Preheat oven to 325 degrees F.
- In a medium bowl, cream the butter and powdered sugar together until fluffy. Stir in the flour until combined.
- Press the flour mixture into an 8×8 pan and bake for 15 minutes.
- In another bowl, beat the eggs lightly, then stir in the sugar, 2 Tbsp flour, lemon juice, and lemon rind. Mix well.
- Pour the lemon mixture over the hot crust and bake for 15-20 minutes, until middle is set and edges start to brown.
- Sift powdered sugar on top and allow to cool before serving.
