Tex-Mex Rice

INGREDIENTS
- 1 cup long-grain white rice
- 2 cups chicken broth
- ½ cup salsa
- ¼ cup corn
- 2 cloves garlic
- 2 Tbsp vegetable oil
DIRECTIONS
- In a heavy pot, heat the oil and cook the garlic on high until browned, then discard the garlic.
- Reduce heat to medium-high and add the rice. Cook, stirring constantly, until browned.
- Add the broth, salsa, and corn, and bring to a boil. Then cover and simmer on low for 20 minutes.
- Fluff rice with a fork and serve with chimichangas!
