Boardwalk Fries

INGREDIENTS
- 4 russet potatoes, scrubbed but unpeeled
- 1 cup salt
- Oil for frying
- Sea salt, apple cider vinegar, and Old Bay seasoning to taste
DIRECTIONS
- In a large bowl, mix the salt and the water until the salt is dissolved.
- Slice the potatoes into ½”-thick fries, and let them soak in the salt water for about 30 minutes. Drain and rinse.
- Fill a large pot with water and heat over medium to 170 degrees F (there might be a few bubbles but it should NOT be boiling). Add the potatoes and let them sit in the warm water for 15 minutes.
- Transfer the fries to a paper towel-lined surface to dry completely.
- In a dutch oven, heat 3 inches of oil until it reaches 400 degrees F.
- Fry the potatoes in batches for about 1 ½ minutes, removing before they turn brown. Transfer them to a paper towel-lined surface to drain and cool for 30 minutes.
- Bring the oil back up to 375 and fry in batches again, this time for about 3 minutes until golden brown.
- Let drain on paper towels again and salt immediately. Sprinkle with vinegar and Old Bay before serving warm!
