Wild Rice Salad

INGREDIENTS
- 1 cup cooked wild rice blend (or wild rice on its own, if you can find it!)
- ½ tsp sea salt
- ¼ cup orange juice
- ½ tsp orange zest
- 2 Tbs olive oil
- 3 Tbs apple cider vinegar
- 2 Tbs honey
- 1 tsp Dijon mustard
- ¼ tsp ground black pepper
- 1 cup toasted pecans, chopped
- ½ cup dried cranberries
- ½ cup chopped Italian parsley
- 2 celery ribs, diced
- 1 honeycrisp apple, diced
- 2 green onions, thinly sliced
DIRECTIONS
- In a large serving bowl, combine the orange juice, orange zest, olive oil, vinegar, honey, mustard, pepper, and remaining salt.
- Add the rice, pecans, cranberries, parsley, celery, apple, and green onions. Toss to combine and coat with the dressing.
- Serve at room temperature.
