Chocolate Haupia Pie

INGREDIENTS

  • 1 9-inch pie crust
  • 1 ½ cups whole milk, divided
  • 5 Tbsp cornstarch
  • 1 (14-oz) can unsweetened coconut milk
  • 1 cup sugar
  • 1 cup semi-sweet chocolate chips
  • Whipped cream for topping

DIRECTIONS

  • Pierce the crust all over and blind bake until golden brown. Set aside to cool completely.
  • In a small bowl, combine ½ cup whole milk and the cornstarch until dissolved. Set aside.
  • In a saucepan over medium heat, whisk together 1 cup whole milk, the coconut milk, and the sugar. Simmer, stirring frequently, until the sugar is dissolved.
  • Whisking constantly, slowly add the cornstarch mixture to the saucepan. Continue stirring until the mixture becomes very thick (thicker than a usual pudding).
  • Pour half into a bowl and set aside. Add the chocolate chips into the saucepan and stir until the chocolate chips have melted and the mixture is smooth.
  • Pour the chocolate mixture into the cooled pie crust and smooth with a rubber spatula.
  • Clean the spatula, then top the chocolate layer with the set-aside custard and smooth it as well.
  • Cover and refrigerate for at least 6 hours.
  • Top with whipped cream and enjoy!
