California Burrito

INGREDIENTS

  • 2 lbs skirt steak
  • 1 Tbsp garlic salt
  • 1 Tbsp soy sauce
  • 3 Tbsp olive oil
  • 1 tsp ground pepper
  • 4 large tortillas
  • 1 cup shredded Mexican cheese or more to taste
  • FRENCH FRIES!!’
  • Guacamole, pico de gallo, diced green onions, and sour cream to taste
  • Hot sauce for serving

DIRECTIONS

  • In a bowl, combine the soy sauce, olive oil, and garlic salt. Chop the steak into bite-size pieces and toss in the sauce, then cover and set aside for at least 15 minutes to marinate.
  • In a skillet over high heat, brown the steak, turning infrequently, until nicely seared.
  • On a griddle over medium-low heat, cook a tortilla for about 30 seconds. Flip and sprinkle with ¼ cup shredded cheese, an cook until the cheese begins to melt.
  • Remove the tortilla to a plate or work surface. Add ¼ of the cooked steak, guacamole, pico de gallo, and chipotle mayo to taste. Fold burrito-style. 
  • Repeat with remaining tortillas and toppings.
  • Enjoy with hot sauce!
