Tex-Mex Rice

INGREDIENTS

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup salsa
  • ¼ cup corn
  • 2 cloves garlic
  • 2 Tbsp vegetable oil

DIRECTIONS

  • In a heavy pot, heat the oil and cook the garlic on high until browned, then discard the garlic.
  • Reduce heat to medium-high and add the rice. Cook, stirring constantly, until browned.
  • Add the broth, salsa, and corn, and bring to a boil. Then cover and simmer on low for 20 minutes.
  • Fluff rice with a fork and serve with chimichangas!
