Nopalitos Salad

INGREDIENTS
- 1 tomato, diced
- 1 small white onion, diced
- 2 cups cooked nopalitos
- ¼ cup chopped cilantro
- 2 Tbsp olive oil
- 2 Tbsp lime juice
- 1 Tbsp oregano
- ½ tsp salt
- Queso fresco for garnish
- Avocado for garnish
DIRECTIONS
- If using jarred nopalitos, strain and rinse them, and, if needed, chop into about the same size as the tomatoes and onions.
- In a large serving bowl, toss together the nopalitos, tomato, onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, oregano, and salt.
- Pour the dressing over the vegetables and toss to coat.
- Cover and refrigerate for at least 1 hour.
- Garnish with cheese and avocado slices and serve cold!
