Pioneer Soda Bread

Total time: 45 minutes
INGREDIENTS
- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 2 tsp salt
- 1 tsp baking soda
- 1 egg
- 1 ¾ cups buttermilk
- 2 Tbs honey
- 2 Tbs melted butter
- Softened butter and flour for dusting
DIRECTIONS
- Preheat the oven to 400 degrees F.
- In a large bowl, whisk together the flour, salt, and baking soda.
- In a separate bowl, beat the egg and buttermilk. Add the honey and melted butter and stir to combine.
- Add the liquid ingredients to the dry ingredients and stir with a rubber spatula until just combined. The mixture will be sticky; you don’t want to overwork it!
- Grease a cast-iron skillet with softened butter and set aside.
- Lightly flour your hands and sprinkle a bit of flour over the dough, then use your hands to scoop out the dough, shape it into a ball (kneading a bit if necessary), and transfer it to the prepared skillet. Dust with a bit more flour, then score a deep X in the top with a sharp knife.
- Bake in the oven for 35 to 40 minutes until golden brown and it sounds hollow when the bottom is tapped.
- Transfer the loaf to a cooling rack and let it cool for at least 15 minutes before slicing.
NOTES
- If you don’t have whole wheat flour, you can just use 4 cups of all-purpose flour.
