Reuben Sandwiches

INGREDIENTS
- 1 lb corned beef, warmed
- 12 slices rye bread
- 1/4 cup butter, room temperature
- 1 cup sauerkraut, drained
- 12 slices Swiss cheese
- 1/2 cup Russian dressing
- Salt and pepper to taste
DIRECTIONS
- Lightly butter one side of each slice of bread.
- Assemble sandwiches with Russian dressing spread on the bottom slice, top with a thick layer of corned beef, 2 slices of Swiss cheese, then sauerkraut.
- Heat a skillet over medium heat and toast the sandwiches until cheese melts and bread is toasted, about 2 minutes per side.
- Enjoy!
