Reuben Sandwiches

INGREDIENTS

  • 1 lb corned beef, warmed
  • 12 slices rye bread
  • 1/4 cup butter, room temperature
  • 1 cup sauerkraut, drained
  • 12 slices Swiss cheese
  • 1/2 cup Russian dressing
  • Salt and pepper to taste

DIRECTIONS

  • Lightly butter one side of each slice of bread. 
  • Assemble sandwiches with Russian dressing spread on the bottom slice, top with a thick layer of corned beef, 2 slices of Swiss cheese, then sauerkraut.
  • Heat a skillet over medium heat and toast the sandwiches until cheese melts and bread is toasted, about 2 minutes per side.
  • Enjoy!
