Baked Salmon

INGREDIENTS
- 2 lbs sockeye salmon, skin on, room temperature
- 3 Tbs butter, melted
- 1 Tbs olive oil
- 1 lemon, sliced
- 4 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1 Tbs fresh dill
DIRECTIONS
- Preheat oven to 380 degrees F. Line a 9×13 baking dish or tray with tin foil (making sure it extends up the sides) and grease with cooking spray.
- Arrange half the sliced lemon on the prepared tray, then place the salmon on top.
- In a small bowl, whisk together the melted butter, olive oil, and garlic. Pour over the fish, then season with salt and pepper.
- Bake for 20 minutes, or until internal temperature reaches 145 degrees F.
- Remove from the oven, top with fresh dill and remaining lemon slices, and cover with foil. Let rest for 5 minutes before serving.
