Berry Cobbler

INGREDIENTS

Filling

  • 6 cups mixed berries (frozen or fresh)
  • ⅔ cup sugar
  • ¼ cup cornstarch
  • Pinch of salt

Dough

  • 2 cups all-purpose flour
  • ½ cup sugar + 2 Tbs, divided
  • 3 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon, divided
  • 1 cup buttermilk
  • 6 Tbs butter, melted
  • 1 tsp vanilla extract
  • ¼ cup milk

DIRECTIONS

  • Preheat oven to 375 degrees F. 
  • In a large bowl, fold the berries with the sugar, cornstarch, and salt. Let them sit for 20 minutes, stirring occasionally.
  • Pour the berries into a large cast-iron skillet, pie dish, or baking dish. Bake for 25 minutes, until bubbling.
  • Meanwhile, in another large bowl, whisk together the flour, ½ cup sugar, baking powder, baking soda, salt, and ¼ tsp cinnamon.
  • In a separate bowl, mix together the melted butter, buttermilk, and vanilla.
  • In a small bowl, combine the 2 Tbs sugar and cinnamon. Set aside.
  • When the berries are almost done baking, pour the wet ingredients over the dry and gently mix them until just combined.
  • When the berries are done baking, drop the biscuit dough in pieces over top in an even layer. Brush with milk, and sprinkle with the cinnamon-sugar mixture. 
  • Return the pan to the oven and increase the oven temperature to 425 degrees F.
  • Bake until the biscuits are golden brown, 15 to 18 minutes.
  • Let cool before serving with vanilla ice cream!
