Berry Cobbler

INGREDIENTS
Filling
- 6 cups mixed berries (frozen or fresh)
- ⅔ cup sugar
- ¼ cup cornstarch
- Pinch of salt
Dough
- 2 cups all-purpose flour
- ½ cup sugar + 2 Tbs, divided
- 3 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon, divided
- 1 cup buttermilk
- 6 Tbs butter, melted
- 1 tsp vanilla extract
- ¼ cup milk
DIRECTIONS
- Preheat oven to 375 degrees F.
- In a large bowl, fold the berries with the sugar, cornstarch, and salt. Let them sit for 20 minutes, stirring occasionally.
- Pour the berries into a large cast-iron skillet, pie dish, or baking dish. Bake for 25 minutes, until bubbling.
- Meanwhile, in another large bowl, whisk together the flour, ½ cup sugar, baking powder, baking soda, salt, and ¼ tsp cinnamon.
- In a separate bowl, mix together the melted butter, buttermilk, and vanilla.
- In a small bowl, combine the 2 Tbs sugar and cinnamon. Set aside.
- When the berries are almost done baking, pour the wet ingredients over the dry and gently mix them until just combined.
- When the berries are done baking, drop the biscuit dough in pieces over top in an even layer. Brush with milk, and sprinkle with the cinnamon-sugar mixture.
- Return the pan to the oven and increase the oven temperature to 425 degrees F.
- Bake until the biscuits are golden brown, 15 to 18 minutes.
- Let cool before serving with vanilla ice cream!
