Bison Burgers

INGREDIENTS

  • 2 lbs ground bison
  • 2 tsp Dijon mustard
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 6 brioche hamburger buns
  • 6 slices swiss cheese
  • 6 slices tomatoes
  • 6 slices onion
  • Additional toppings to taste: berry BBQ sauce, ketchup, mayo, mustard, dill pickles

DIRECTIONS

  • In a large bowl, gently mix the meat, mustard, and spices until combined. Be careful not to overwork the meat!
  • Divide the meat into six even-sized patties, ⅓ lb each and slightly larger than your burger buns. 
  • On a grill over high heat (or in a greased skillet over medium-high heat), cook the patties until medium-rare, about 2-3 minutes per side. The internal temperature should be 140-145 degrees F. 
  • Top with cheese and cover for the last minute of grilling to melt.
  • Serve on hamburger buns with tomatoes, onion, and additional toppings to taste!
