Chicken-Fried Steak

INGREDIENTS

  • 2 cups all-purpose flour, divided
  • 2 tsp baking powder
  • 2 tsp salt
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp pepper
  • ½ tsp baking soda
  • 1 egg, lightly beaten
  • 1 ¼ cups buttermilk, divided
  • 4 (4-oz) beef cube steaks
  • 1 ½ cups whole milk
  • Oil for frying
  • Pepper to taste

DIRECTIONS

  • In a shallow bowl or plate, whisk together 1 ¾ cups flour, baking powder, salt, onion powder, garlic powder, paprika, baking soda, and pepper. 
  • On a separate plate, mix together the egg and ¾ cup buttermilk.
  • Pat the cube steaks dry, then dredge in the flour mixture, then the egg mixture, then the flour mixture again. Let them rest for 5 minutes.
  • Heat ½ inch of oil in a large skillet over medium-high heat. Fry the steaks until golden brown on both sides, 10 to 12 minutes, only flipping once.
  • Transfer the steaks to a paper towel-lined plate to drain, and keep them warm while preparing the gravy. 
  • Reserve about ¼ cup of the drippings and discard the rest. Add ¼ cup flour to the skillet and whisk over medium heat until smooth, about 2 minutes.  
  • Whisk in the whole milk and remaining ½ cup buttermilk, then bring to a boil for a couple minutes until thickened. Season with pepper to taste. 
  • Serve the steaks topped with gravy!
