Chicken-Fried Steak

INGREDIENTS
- 2 cups all-purpose flour, divided
- 2 tsp baking powder
- 2 tsp salt
- 2 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp pepper
- ½ tsp baking soda
- 1 egg, lightly beaten
- 1 ¼ cups buttermilk, divided
- 4 (4-oz) beef cube steaks
- 1 ½ cups whole milk
- Oil for frying
- Pepper to taste
DIRECTIONS
- In a shallow bowl or plate, whisk together 1 ¾ cups flour, baking powder, salt, onion powder, garlic powder, paprika, baking soda, and pepper.
- On a separate plate, mix together the egg and ¾ cup buttermilk.
- Pat the cube steaks dry, then dredge in the flour mixture, then the egg mixture, then the flour mixture again. Let them rest for 5 minutes.
- Heat ½ inch of oil in a large skillet over medium-high heat. Fry the steaks until golden brown on both sides, 10 to 12 minutes, only flipping once.
- Transfer the steaks to a paper towel-lined plate to drain, and keep them warm while preparing the gravy.
- Reserve about ¼ cup of the drippings and discard the rest. Add ¼ cup flour to the skillet and whisk over medium heat until smooth, about 2 minutes.
- Whisk in the whole milk and remaining ½ cup buttermilk, then bring to a boil for a couple minutes until thickened. Season with pepper to taste.
- Serve the steaks topped with gravy!
