Homemade Blackberry Soda

INGREDIENTS
- 2 cups water
- ¼ cup honey
- 1 ½ cups blackberries
- 1 liter seltzer water
DIRECTIONS
- In a small saucepan, combine the water and honey and cook over medium-high heat until the honey is dissolved. Then set it aside to cool while preparing the rest.
- Put the blackberries in a blender and puree them.
- Use a large spoon and a fine-mesh strainer over a bowl to strain out the blackberry juice from the seeds and fibers, adding a bit of water if necessary to flush out more juice.
- Transfer the seltzer water to a pitcher so that you can use the bottle for the finished soda. Pour the blackberry juice into the seltzer bottle, then refill with seltzer water almost to the top. Add in a little of the honey mixture and taste, adding more if you want it sweeter.
- Seal the bottle and refrigerate before serving cold.
NOTES
- I ended up adding the whole amount of syrup and still didn’t think it tasted sweet as I was making it, but after refrigerating for a couple of hours, the flavor was much better.
