Homemade Tater Tots

INGREDIENTS

  • 2 lbs russet potatoes, peeled
  • 1 Tbs flour
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp dried oregano
  • ¼ tsp dried dill
  • Salt and pepper to taste
  • 3 cups vegetable oil

DIRECTIONS

  • Place the potatoes in a Dutch oven and cover with cold, salted water by 1 inch. Bring to a boil, then simmer, covered, about 6 minutes, until parboiled. Drain well, and let cool.
  • Use a box grater to finely shred the potatoes. Use a clean dish towel or cheese cloth to squeeze out as much moisture as possible.
  • In a large bowl, toss the potatoes with flour, garlic powder, onion powder, oregano, and dill. Season with salt and pepper to taste.
  • In a Dutch oven or other large stockpot, heat vegetable oil to 350 degrees F.
  • Shape the shredded potatoes into tots and fry in batches until golden and crispy, just 2-4 minutes. Drain on a paper towel-lined plate.
  • Serve immediately with desired toppings/dips!
