Homemade Tater Tots

INGREDIENTS
- 2 lbs russet potatoes, peeled
- 1 Tbs flour
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp dried oregano
- ¼ tsp dried dill
- Salt and pepper to taste
- 3 cups vegetable oil
DIRECTIONS
- Place the potatoes in a Dutch oven and cover with cold, salted water by 1 inch. Bring to a boil, then simmer, covered, about 6 minutes, until parboiled. Drain well, and let cool.
- Use a box grater to finely shred the potatoes. Use a clean dish towel or cheese cloth to squeeze out as much moisture as possible.
- In a large bowl, toss the potatoes with flour, garlic powder, onion powder, oregano, and dill. Season with salt and pepper to taste.
- In a Dutch oven or other large stockpot, heat vegetable oil to 350 degrees F.
- Shape the shredded potatoes into tots and fry in batches until golden and crispy, just 2-4 minutes. Drain on a paper towel-lined plate.
- Serve immediately with desired toppings/dips!
