Mom’s Lemon Bars

INGREDIENTS

  • ½ cup butter, softened
  • ¼ cup powdered sugar + more for dusting
  • 1 cup flour + 2 Tbsp (divided)
  • 2 eggs
  • 1 cup sugar
  • 2 Tbsp lemon juice
  • Zest from ½ lemon

DIRECTIONS

  • Preheat oven to 325 degrees F.
  • In a medium bowl, cream the butter and powdered sugar together until fluffy. Stir in the flour until combined.
  • Press the flour mixture into an 8×8 pan and bake for 15 minutes.
  • In another bowl, beat the eggs lightly, then stir in the sugar, 2 Tbsp flour, lemon juice, and lemon rind. Mix well.
  • Pour the lemon mixture over the hot crust and bake for 15-20 minutes, until middle is set and edges start to brown.
  • Sift powdered sugar on top and allow to cool before serving.
