Nopalitos Salad

INGREDIENTS

  • 1 tomato, diced
  • 1 small white onion, diced
  • 2 cups cooked nopalitos
  • ¼ cup chopped cilantro
  • 2 Tbsp olive oil
  • 2 Tbsp lime juice
  • 1 Tbsp oregano
  • ½ tsp salt
  • Queso fresco for garnish
  • Avocado for garnish

DIRECTIONS

  • If using jarred nopalitos, strain and rinse them, and, if needed, chop into about the same size as the tomatoes and onions.
  • In a large serving bowl, toss together the nopalitos, tomato, onion, and cilantro.
  • In a small bowl, whisk together the olive oil, lime juice, oregano, and salt. 
  • Pour the dressing over the vegetables and toss to coat.
  • Cover and refrigerate for at least 1 hour.
  • Garnish with cheese and avocado slices and serve cold!
