Baked Sweet Potato Fries

INGREDIENTS

  • 2 sweet potatoes, peeled and cut lengthwise into ½”-thick strips
  • 2 tsp cornstarch
  • 2 Tbs olive oil
  • 1 tsp paprika
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 Tbs brown sugar

DIRECTIONS

  • Preheat the oven to 415 degrees F.
  • Soak the sweet potatoes in a large bowl of ice water for 30 minutes. Pat them dry, then transfer them to a large ziploc bag and toss them with the cornstarch until evenly coated.
  • In a small bowl, whisk together the olive oil, paprika, and cinnamon. 
  • Line a baking sheet with parchment paper and spread the sweet potato wedges on it in a single layer. 
  • Pour the olive oil mixture over the sweet potatoes and toss to coat evenly. Sprinkle with salt and brown sugar. 
  • Bake for 30 minutes, flipping them after 15 minutes so they bake evenly. 
  • Serve hot with fry sauce or comeback sauce!
