Baked Sweet Potato Fries

INGREDIENTS
- 2 sweet potatoes, peeled and cut lengthwise into ½”-thick strips
- 2 tsp cornstarch
- 2 Tbs olive oil
- 1 tsp paprika
- 1 tsp ground cinnamon
- ½ tsp salt
- 2 Tbs brown sugar
DIRECTIONS
- Preheat the oven to 415 degrees F.
- Soak the sweet potatoes in a large bowl of ice water for 30 minutes. Pat them dry, then transfer them to a large ziploc bag and toss them with the cornstarch until evenly coated.
- In a small bowl, whisk together the olive oil, paprika, and cinnamon.
- Line a baking sheet with parchment paper and spread the sweet potato wedges on it in a single layer.
- Pour the olive oil mixture over the sweet potatoes and toss to coat evenly. Sprinkle with salt and brown sugar.
- Bake for 30 minutes, flipping them after 15 minutes so they bake evenly.
- Serve hot with fry sauce or comeback sauce!
