Servings: 8

Total time: 3 hours, 30 minutes

INGREDIENTS

  • 1 cup warm water
  • 3 Tbs warm whole milk
  • 2 tsp active dry yeast
  • 2 ½ Tbs sugar
  • 2 eggs
  • 3 cups bread flour
  • ⅓ cup all-purpose flour
  • 1 ½ tsp salt
  • 2 Tbs unsalted butter, softened
  • Sesame seeds

DIRECTIONS

  • In a medium bowl, whisk together the water, milk, yeast, and sugar. In a separate bowl, lightly beat 1 egg (the other will be saved for the end).
  • In the bowl of a stand mixer with a paddle attachment, combine the flours, salt, and butter, until it resembles coarse crumbs.
  • Add in the yeast mixture and egg and mix on low for about 5 minutes, until it forms a sticky, shaggy dough.
  • Form the dough into a ball, cover, and let it rise in a warm place until doubled in size, around 2 hours.
  • Divide the dough into 8 equal pieces and shape them into buns. Transfer them to a baking sheet lined with parchment paper, cover, and let them rest for 1 hour until risen slightly.
  • Preheat the oven to 400 degrees F and place a shallow baking dish with ½ cup of water in the bottom of the oven to create steam.
  • In a small bowl, beat the remaining egg and a splash of water. Brush the tops of the buns with the egg wash and sprinkle with sesame seeds.
  • Bake the buns for 15 to 20 minutes, rotating halfway through, until golden brown. Transfer to a wire rack to cool completely before serving with hamburgers or hot chicken!
