Sweet Potato Biscuits

INGREDIENTS

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • ½ tsp kosher salt
  • 6 Tbs cold butter, cubed
  • 1 cup sweet potato, cooked and mashed
  • ½ cup cold buttermilk

DIRECTIONS

  • Preheat the oven to 375 degrees F.
  • In a large bowl, whisk together the flour, baking powder, and salt. 
  • Add the butter and use a fork or pastry blender to cut it into the flour until the butter pieces are about pea-sized.
  • Add in the sweet potato and buttermilk and stir to incorporate.
  • Dust your work surface with flour and turn out the dough to knead by hand until everything is fully mixed in and the dough is slightly sticky.
  • Shape the dough into a rectangle about 1” thick. 
  • Use a biscuit cutter or sharp, round cookie cutter to cut out rounds of dough. Combine any scraps to use all the dough you have.
  • Line a baking sheet with parchment paper and arrange the biscuits on it. 
  • Cover with plastic wrap and refrigerate for about 30 minutes.
  • Bake for about 15 to 20 minutes and allow to cool for about 5 minutes before serving.
  • Serve warm with honey butter or ham!
