Sweet Potato Pie

INGREDIENTS

  • ⅓ cup butter, softened
  • 1 cup sugar
  • 3 eggs, lightly beaten
  • ¾ cup evaporated milk
  • 2 sweet potatoes, peeled, boiled or baked until soft, and mashed well 
  • 1 ½ tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ginger
  • ¼ tsp salt
  • Unbaked pie crust

DIRECTIONS

  • Preheat the oven to 425 degrees F. 
  • In a stand mixer, beat the butter and sugar together.
  • Add the eggs and mix until well combined.
  • Add the milk, sweet potatoes, vanilla, cinnamon, nutmeg, ginger, and salt. 
  • Pour the mixture into the pie shell.
  • Bake for 15 minutes, then reduce the heat to 350 degrees F and bake for an additional 40 minutes or until done.
  • Let the pie cool before serving.
