Breakfast Sandwich

INGREDIENTS
- 4 Tbs butter, softened
- 12 slices Taylor ham or pork roll
- 8 eggs
- 12 slices American cheese
- 4 kaiser rolls, cut in half and toasted
- Salt and pepper to taste
- Ketchup to taste
DIRECTIONS
- In a skillet, melt the butter over medium heat.
- Cut four slits along the edges of the ham (so it doesn’t curl), then cook in the skillet for about 5 minutes, until edges are browned. Transfer to a paper-towel-lined plate to drain.
- Fry the eggs two at a time in the same skillet and season with salt and pepper.
- Turn off the heat, top the 2 eggs with a slice of cheese, cover the skillet, and let it sit about 30 seconds until the cheese is softened. Repeat with the additional eggs.
- To assemble the sandwiches, plate the bottom half of the toasted roll. Top it with a slice of cheese, then three slices of ham, another slice of cheese, then the cheese-topped eggs.
- Season with ketchup, salt and pepper to taste, then top with the other half of the roll.
- Serve warm.
