Servings: 4

Total time: 15 minutes

INGREDIENTS

  • 4 Tbs butter, softened
  • 12 slices Taylor ham or pork roll
  • 8 eggs
  • 12 slices American cheese
  • 4 kaiser rolls, cut in half and toasted
  • Salt and pepper to taste
  • Ketchup to taste

DIRECTIONS

  • In a skillet, melt the butter over medium heat.
  • Cut four slits along the edges of the ham (so it doesn’t curl), then cook in the skillet for about 5 minutes, until edges are browned. Transfer to a paper-towel-lined plate to drain.
  • Fry the eggs two at a time in the same skillet and season with salt and pepper.
  • Turn off the heat, top the 2 eggs with a slice of cheese, cover the skillet, and let it sit about 30 seconds until the cheese is softened. Repeat with the additional eggs.
  • To assemble the sandwiches, plate the bottom half of the toasted roll. Top it with a slice of cheese, then three slices of ham, another slice of cheese, then the cheese-topped eggs.
  • Season with ketchup, salt and pepper to taste, then top with the other half of the roll.
  • Serve warm.
