Saltwater Taffy

INGREDIENTS
- 1 cup sugar
- 1 Tbs cornstarch
- 1 Tbs butter
- ⅔ cup light corn syrup
- 1 tsp salt
- ½ cup water
- ½ tsp flavored extract of choice
- 2 drops food coloring of choice
- Parchment paper squares for wrapping
DIRECTIONS
- Fit a large pot with a candy thermometer.
- Whisk together the sugar and cornstarch in the pot, then stir in the butter, corn syrup, salt, and water.
- Heat the mixture over medium heat until it reaches 250 degrees F (or 240, if you’re at higher elevation).
- Remove from heat and stir in the food coloring and flavor extract.
- Grease a heatproof baking dish and pour the taffy into it. Let it cool until it’s easy to handle, about 30 minutes.
- Grease your hands, and stretch and fold the taffy until it goes from translucent to opaque and is harder to pull, about 15 minutes.
- On a greased surface, roll the taffy into a 30”-long, 1”-thick log.
- Slice the taffy into bite-sized pieces.
- Wrap each piece of taffy in a square of parchment paper and let cool completely before serving.
