Saltwater Taffy

INGREDIENTS

  • 1 cup sugar
  • 1 Tbs cornstarch
  • 1 Tbs butter
  • ⅔ cup light corn syrup
  • 1 tsp salt
  • ½ cup water
  • ½ tsp flavored extract of choice
  • 2 drops food coloring of choice
  • Parchment paper squares for wrapping

DIRECTIONS

  • Fit a large pot with a candy thermometer.
  • Whisk together the sugar and cornstarch in the pot, then stir in the butter, corn syrup, salt, and water. 
  • Heat the mixture over medium heat until it reaches 250 degrees F (or 240, if you’re at higher elevation).
  • Remove from heat and stir in the food coloring and flavor extract.
  • Grease a heatproof baking dish and pour the taffy into it. Let it cool until it’s easy to handle, about 30 minutes. 
  • Grease your hands, and stretch and fold the taffy until it goes from translucent to opaque and is harder to pull, about 15 minutes.
  • On a greased surface, roll the taffy into a 30”-long, 1”-thick log. 
  • Slice the taffy into bite-sized pieces.
  • Wrap each piece of taffy in a square of parchment paper and let cool completely before serving.
