INGREDIENTS
- 3 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cups lard
- 3/4 cup sugar
- 1 large egg
- 1 tsp anise extract
- 1 tsp vanilla extract
- Zest of 1 orange
- 1/2 cup sugar and 2 tsp cinnamon combined for dusting
DIRECTIONS
- In a medium bowl, sift together the flour, baking powder, and salt.
- In a separate large bowl, beat together the sugar and lard until fluffy. Add the egg, anise, vanilla, and orange zest and beat until combined.
- Gradually mix the flour into the wet ingredients until just combined. It will be crumbly! Using your hands, work the dough into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Knead the chilled dough by hand until it becomes soft and smooth. On a floured surface, roll out the dough about 1/4″ thick and cut into desired shapes.
- Bake for 10 to 12 minutes, until just barely golden.
- Let the cookies cool on the pan for about 10 minutes, then dunk the still-warm cookies in the cinnamon-sugar mixture and transfer to a wire rack to finish cooling before serving.
