Servings: 3 dozen cookies

Total time: 1 hour

INGREDIENTS

  • 3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups lard
  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp anise extract
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 1/2 cup sugar and 2 tsp cinnamon combined for dusting

DIRECTIONS

  • In a medium bowl, sift together the flour, baking powder, and salt.
  • In a separate large bowl, beat together the sugar and lard until fluffy. Add the egg, anise, vanilla, and orange zest and beat until combined.
  • Gradually mix the flour into the wet ingredients until just combined. It will be crumbly! Using your hands, work the dough into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Knead the chilled dough by hand until it becomes soft and smooth. On a floured surface, roll out the dough about 1/4″ thick and cut into desired shapes.
  • Bake for 10 to 12 minutes, until just barely golden.
  • Let the cookies cool on the pan for about 10 minutes, then dunk the still-warm cookies in the cinnamon-sugar mixture and transfer to a wire rack to finish cooling before serving.
