Gooey Chex Mix

This recipe comes from my grandma on my mom’s side and has been a beloved snack at family get-togethers as long as I can remember!
INGREDIENTS
- 3 cups Corn Chex
- 3 cups Rice Chex
- 3 cups Golden Grahams
- 2 cups slivered almonds
- 2 cups shredded coconut
- 2 cups sugar
- 2 cups light corn syrup
- 1 1/2 cups butter
DIRECTIONS
- Line two large baking sheets with wax paper and set aside.
- Divide the cereals between two large bowls and mix together. Divide the coconut and almonds between the two bowls, but don’t stir in too much, or it will sink to the bottom.
- In a saucepan over medium high heat, bring the sugar, corn syrup, and butter to a slow boil until it reaches 235 degrees F. or soft-ball stage, about 5-8 minutes.
- One bowl at a time, pour half the syrup mixture over the dry ingredients and stir quickly to coat thoroughly. Repeat with the second bowl.
- Spread the mix out in a single layer on the wax paper-lined baking sheets until cooled completely, about 1 hour. Store in an airtight container.
