Benne Wafers

Total time: 25 minutes

INGREDIENTS

  • 6 Tbs sesame seeds 
  • 1 cup brown sugar
  • 6 Tbs butter
  • 1 egg, beaten
  • ½ cup flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 tsp vanilla

DIRECTIONS

  • Preheat the oven to 375 degrees F. 
  • Toast the sesame seeds in a small skillet over medium heat, stirring occasionally, until browned.
  • Remove from heat and let the seeds cool to room temperature.
  • In a medium bowl, beat the brown sugar and butter together.
  • Add the beaten egg and stir until well combined.
  • In a separate bowl, sift together the flour, salt, and baking powder. 
  • Add the dry ingredients to the wet and stir until just smooth.
  • Mix in the vanilla and the toasted seeds.
  • Line a baking sheet with parchment paper. 
  • Drop the batter onto the parchment paper by teaspoons, leaving enough space for them to spread out while baking.
  • Bake until browned, about 10 minutes. (Note: I used dark brown sugar in mine, so they’re darker in the photo than they’d be if using regular brown sugar.)
  • Let the wafers cool on the pan for a minute, then remove to a wire rack to cool completely.
