Apple Cider Donuts

Yield: 1 dozen donuts
Total time: 45 minutes
INGREDIENTS
- 1 ½ cups apple cider
- 2 cups all-purpose flour
- 1 tsp baking soda
- ¾ tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp apple pie spice
- ¼ tsp salt
- 2 Tbs unsalted butter, melted
- 1 egg, room temperature
- ½ cup packed brown sugar
- ½ cup granulated sugar
- ½ cup milk, room temperature
- 1 tsp vanilla
Topping
- 1 cup granulated sugar
- ¾ tsp ground cinnamon
- ¾ tsp apple pie spice
- 6 Tbs butter, melted
DIRECTIONS
- In a small saucepan over medium heat, cook the apple cider, stirring occasionally, until it reduces to ½ cup, about 20 minutes. Set aside to cool.
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.
- In a separate bowl, whisk together the melted butter, egg, brown sugar, granulated sugar, milk, and vanilla.
- Add the wet ingredients to the dry ingredients, then add the reduced apple cider, and whisk until smooth and combined. (The batter will be thick.)
- Grease the donut pan and spoon or pipe the batter into each donut cup, filling about halfway.
- Bake about 10 minutes, until the edges and top are lightly browned and the donuts bounce back when poked.
- Let them cool for 2 minutes in the pan before removing to a wire rack to cool enough to handle.
- In a medium bowl, combine sugar, cinnamon, and apple pie spice. Put the melted butter in a separate shallow bowl.
- Dip both sides of each donut in the melted butter, then coat with the apple spice topping.
- Serve warm!
