Apple Cider Donuts

Yield: 1 dozen donuts

Total time: 45 minutes

INGREDIENTS

  • 1 ½ cups apple cider
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¾ tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp apple pie spice
  • ¼ tsp salt
  • 2 Tbs unsalted butter, melted
  • 1 egg, room temperature
  • ½ cup packed brown sugar
  • ½ cup granulated sugar
  • ½ cup milk, room temperature
  • 1 tsp vanilla

Topping

  • 1 cup granulated sugar
  • ¾ tsp ground cinnamon
  • ¾ tsp apple pie spice
  • 6 Tbs butter, melted

DIRECTIONS

  • In a small saucepan over medium heat, cook the apple cider, stirring occasionally, until it reduces to ½ cup, about 20 minutes. Set aside to cool.
  • Preheat oven to 350 degrees F. 
  • In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.
  • In a separate bowl, whisk together the melted butter, egg, brown sugar, granulated sugar, milk, and vanilla. 
  • Add the wet ingredients to the dry ingredients, then add the reduced apple cider, and whisk until smooth and combined. (The batter will be thick.)
  • Grease the donut pan and spoon or pipe the batter into each donut cup, filling about halfway.
  • Bake about 10 minutes, until the edges and top are lightly browned and the donuts bounce back when poked. 
  • Let them cool for 2 minutes in the pan before removing to a wire rack to cool enough to handle.
  • In a medium bowl, combine sugar, cinnamon, and apple pie spice. Put the melted butter in a separate shallow bowl.
  • Dip both sides of each donut in the melted butter, then coat with the apple spice topping.
  • Serve warm!
