Burger Buns

INGREDIENTS
- 1 cup warm water
- 3 Tbs warm whole milk
- 2 tsp active dry yeast
- 2 ½ Tbs sugar
- 2 eggs
- 3 cups bread flour
- ⅓ cup all-purpose flour
- 1 ½ tsp salt
- 2 Tbs unsalted butter, softened
- Sesame seeds
DIRECTIONS
- In a medium bowl, whisk together the water, milk, yeast, and sugar. In a separate bowl, lightly beat 1 egg (the other will be saved for the end).
- In the bowl of a stand mixer with a paddle attachment, combine the flours, salt, and butter, until it resembles coarse crumbs.
- Add in the yeast mixture and egg and mix on low for about 5 minutes, until it forms a sticky, shaggy dough.
- Form the dough into a ball, cover, and let it rise in a warm place until doubled in size, around 2 hours.
- Divide the dough into 8 equal pieces and shape them into buns. Transfer them to a baking sheet lined with parchment paper, cover, and let them rest for 1 hour until risen slightly.
- Preheat the oven to 400 degrees F and place a shallow baking dish with ½ cup of water in the bottom of the oven to create steam.
- In a small bowl, beat the remaining egg and a splash of water. Brush the tops of the buns with the egg wash and sprinkle with sesame seeds.
- Bake the buns for 15 to 20 minutes, rotating halfway through, until golden brown. Transfer to a wire rack to cool completely before serving with hamburgers or hot chicken!
