Chocolate Cherry Fudge

INGREDIENTS
- ½ cup unsalted butter
- ½ cup milk
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- Pinch of salt
- 1 tsp vanilla
- ½ cup cocoa powder
- 2 cups powdered sugar
- 2 Tbs dried cherries, roughly chopped, or other additions to taste
DIRECTIONS
- In a saucepan over low heat, bring the butter, milk, white sugar, and brown sugar to a boil, stirring constantly. Cook for 5 minutes.
- Let the mixture cool slightly, then add salt, vanilla, cocoa, and powdered sugar. Mix until smooth. Fold in the dried cherries.
- Pour out onto a baking sheet and let cool until easy to handle. Transfer it to plastic wrap and roll it into a log. Refrigerate for at least 30 minutes until set.
- Cut into pieces and serve cold!
