Chocolate Cherry Fudge

INGREDIENTS

  • ½ cup unsalted butter
  • ½ cup milk
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • Pinch of salt
  • 1 tsp vanilla
  • ½ cup cocoa powder
  • 2 cups powdered sugar
  • 2 Tbs dried cherries, roughly chopped, or other additions to taste

DIRECTIONS

  • In a saucepan over low heat, bring the butter, milk, white sugar, and brown sugar to a boil, stirring constantly. Cook for 5 minutes.
  • Let the mixture cool slightly, then add salt, vanilla, cocoa, and powdered sugar. Mix until smooth. Fold in the dried cherries.
  • Pour out onto a baking sheet and let cool until easy to handle. Transfer it to plastic wrap and roll it into a log. Refrigerate for at least 30 minutes until set. 
  • Cut into pieces and serve cold!
