Clam Fritters

INGREDIENTS
- Vegetable oil for frying
- 1 egg, beaten
- 1/4 cup buttermilk
- 1/4 cup clam broth
- 1/4 cup beer (or chicken stock)
- 1 tsp maple syrup
- 3/4 cup chopped clams
- 1/2 tsp salt
- 3/4 tsp baking powder
- 1 3/4 cups cake flour
DIRECTIONS
- Heat oil to 350 degrees F.
- In a medium bowl, whisk the dry ingredients together.
- Then, in a separate bowl, combine all liquid ingredients (including clams) except the beer. After liquid ingredients are combined, add the beer and mix gently.
- Add the dry ingredients to the wet, and stir until just combined.
- Drop the batter into the hot oil one heaping tablespoonful at a time. Fry until floating and golden brown on both sides, about 5 minutes.
- Drain on paper towels, then serve hot with clear clam chowder.
