Clam Fritters

INGREDIENTS

  • Vegetable oil for frying
  • 1 egg, beaten
  • 1/4 cup buttermilk
  • 1/4 cup clam broth
  • 1/4 cup beer (or chicken stock)
  • 1 tsp maple syrup
  • 3/4 cup chopped clams
  • 1/2 tsp salt
  • 3/4 tsp baking powder
  • 1 3/4 cups cake flour

DIRECTIONS

  • Heat oil to 350 degrees F. 
  • In a medium bowl, whisk the dry ingredients together.
  • Then, in a separate bowl, combine all liquid ingredients (including clams) except the beer. After liquid ingredients are combined, add the beer and mix gently. 
  • Add the dry ingredients to the wet, and stir until just combined.
  • Drop the batter into the hot oil one heaping tablespoonful at a time. Fry until floating and golden brown on both sides, about 5 minutes.
  • Drain on paper towels, then serve hot with clear clam chowder.
