Fried Cheese Curds

INGREDIENTS
- 1 cup flour
- ¼ tsp salt
- 4 eggs
- 1 Tbs whole milk
- 2 cups Italian breadcrumbs
- 16 oz cheese curds
- Oil for frying
DIRECTIONS
- In a shallow bowl, combine the flour and salt.
- In a separate shallow bowl, whisk the eggs with 1 Tbs of milk.
- Place the breadcrumbs in a third shallow bowl.
- Prepare two rimmed baking sheet with wire racks.
- Evenly coat the cheese curds with flour, dredge in the eggs, then evenly and thoroughly coat with bread crumbs.
- Put the cheese curds on one of the wire racks and freeze for 1 hour.
- In a large skillet or pot, heat 2” of oil to 375 degrees F.
- Fry the curds in small batches, turning once, until golden brown. This should only take about a minute.
- Remove from the oil with a slotted spoon and put them on the second wire rack-lined baking sheet to drain.
- Enjoy hot with ranch dressing!
