Fried Cheese Curds

INGREDIENTS

  • 1 cup flour
  • ¼ tsp salt
  • 4 eggs
  • 1 Tbs whole milk
  • 2 cups Italian breadcrumbs
  • 16 oz cheese curds
  • Oil for frying

DIRECTIONS

  • In a shallow bowl, combine the flour and salt.
  • In a separate shallow bowl, whisk the eggs with 1 Tbs of milk.
  • Place the breadcrumbs in a third shallow bowl.
  • Prepare two rimmed baking sheet with wire racks. 
  • Evenly coat the cheese curds with flour, dredge in the eggs, then evenly and thoroughly coat with bread crumbs. 
  • Put the cheese curds on one of the wire racks and freeze for 1 hour.
  • In a large skillet or pot, heat 2” of oil to 375 degrees F. 
  • Fry the curds in small batches, turning once, until golden brown. This should only take about a minute.
  • Remove from the oil with a slotted spoon and put them on the second wire rack-lined baking sheet to drain.
  • Enjoy hot with ranch dressing!
