Green Chile Cheese Fries

INGREDIENTS
- 4 russet potatoes, peeled
- Oil for frying
- Salt to taste
- 1 cup chunky green chile sauce
- 1 cup cheddar cheese, shredded
- ½ cup monterey jack cheese, shredded
- Sour cream, sliced jalapeno peppers, cilantro, and lime wedges for topping
DIRECTIONS
- Cut potatoes into french fry sticks. Put them in a large bowl and cover with cold water. Refrigerate for 30 minutes to an hour.
- Pour oil into a dutch oven or heavy bottomed pot until it is 3″ deep. Heat over medium heat until the temperature reaches 375 degrees.
- Drain the potatoes and dry completely with paper towels. Fry the potatoes, working in small batches, until crisp and golden, about 10 minutes depending on the thickness of the fries.
- Remove to a paper towel lined plate to drain and season immediately with salt.
- When the fries are ready, arrange half of them in a cast-iron skillet, top with half the green chile sauce, then half the cheese, and repeat.
- Turn on the oven broiler to high and broil for about five minutes to melt the cheese.
- Top with sour cream, sliced jalapenos, cilantro, and lime, and enjoy!
NOTES
- You can cut the cooking time down to only 10 minutes by using store-bought fries.
