Green Chile Cheese Fries

INGREDIENTS

  • 4 russet potatoes, peeled
  • Oil for frying
  • Salt to taste
  • 1 cup chunky green chile sauce
  • 1 cup cheddar cheese, shredded
  • ½ cup monterey jack cheese, shredded
  • Sour cream, sliced jalapeno peppers, cilantro, and lime wedges for topping

DIRECTIONS

  • Cut potatoes into french fry sticks. Put them in a large bowl and cover with cold water. Refrigerate for 30 minutes to an hour. 
  • Pour oil into a dutch oven or heavy bottomed pot until it is 3″ deep. Heat over medium heat until the temperature reaches 375 degrees. 
  • Drain the potatoes and dry completely with paper towels. Fry the potatoes, working in small batches, until crisp and golden, about 10 minutes depending on the thickness of the fries.
  • Remove to a paper towel lined plate to drain and season immediately with salt.
  • When the fries are ready, arrange half of them in a cast-iron skillet, top with half the green chile sauce, then half the cheese, and repeat. 
  • Turn on the oven broiler to high and broil for about five minutes to melt the cheese.
  • Top with sour cream, sliced jalapenos, cilantro, and lime, and enjoy!

NOTES

  • You can cut the cooking time down to only 10 minutes by using store-bought fries.
