Homemade Tortillas

INGREDIENTS
- 4 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp salt
- 3 Tbs lard
- 1 1/2 cups hot water
DIRECTIONS
- In a large bowl, sift together the dry ingredients. Cut in the lard until it resembles coarse bread crumbs.
- Add the hot water a little at a time and use your hands to work it into a ball of dough. Knead the dough until it becomes soft and pliable.
- Let the dough rest for 15 minutes, and heat an ungreased skillet over very high heat.
- Pinch off an egg-sized piece of dough and shape it into a disc, then use a rolling pin on a floured surface to flatten it into the shape and thickness of a tortilla. Repeat with the remaining dough.
- Cook the tortillas about 30 seconds each side, until they’re toasted and bubbling.
- Keep warm under a towel while cooking the rest, then enjoy with carne adobada!
